In una padella fate sciogliere il burro, aggiungere le mele tagliate a dadini e la salsiccia sbriciolata, fate cuocere per qualche minuto poi versate il tutto nella tortiera. Mettete in una ciotola 250gr di farina con le spezie, il tuorlo dell'uovo e lo zucchero unito al burro, sciogliete il bicarbonato in un cucchiaio di acqua tiepida e aggiugetelo al composto. Unite la farina farina rimasta 150gr , stendete la pasta ad un centimetro di spessore, tagliate le forme e mettetele sulla placca del forno unta. Infornate a 180° per 10 minuti. versatevi nell'incavo centrale il lievito stemperato bene in un po' d'acqua tiepida, il burro spezzettato, le uova, meta' prosciutto tagliato a cubetti e il sale fino. Impastate fino ad ottenere un composto ben amalgamato e consistente. Quindi mentre riposa coperto da un canovaccio, imburrare e infarinare una teglia da forno, stendervi l'impasto in modo da formare uno strato uniforme di 1 cm e cospargetelo di dadini di prosciutto. Per facilitare la lievitazione, fate due tagli perpendicolari sulla sommita' quindi lasciate riposare per 45min. circa in luogo caldo. cuocerla in padella unta di burro e ottenere delle crepes; farcirle con cubetti di pancarrè ammollati nella panna e cubetti di gorgonzola; chiuderle “a fazzoletto” e gratinarle in forno per 4 minuti.&lt;br /&gt;Servire le crepes con una julienne di speck rosolata in padella con burro, zafferano, prezzemolo, pinoli e uvetta.&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://1.bp.blogspot.com/_AG1-UwzyKSI/RyJHdIFw2sI/AAAAAAAAAAM/0MZRus8XiF8/s1600-h/piatto-finito.jpg"&gt;&lt;img style="margin: 0pt 10px 10px 0pt;
